Caponata
I started to cook this dish in 2023, when I had still my own production of eggplants at the Buonrespiro Garden. It is one of the finest dishes for starter or aperitivo.
In this case the pretreatment of the Aubergines with salt is appropriate. They will share the salt later with onions and tomatoes. Deep fry (I should try air frying) tje melanzane
Slice red onions very finely and panfry them with some pieces of garlic, add the melanzane, cook, dice tomatoes with a lot of taste, add tomatoes, water capers, add capers.Beforehand soak the right amount of raisins in dry Marsala. Add the raisins with the capers to the cooking veggies.
Cook until all the veggies are soft.Serve cold!
Grechetto is just woderful with this dish, but I can easily imagine also a red wine, bt not too heavy stuff
