Deep fried Baccalà is a Roma Specialty. Bites of Baccalà with pastella, a past of flour and water. I often find that the pastella is too dominant and covers the Baccalà.
I am trying an alternative version covering the fish only wit h bread crumbs. The fish is marinated in a spicy sauce,, Chily oil, Soya , Alcohol and then covered with bread crumbs..and deepfried
Most appropriate for Baccalà, Palombo is also possible. I want to try it with monk fish
