It is a Sardegna vermentino, a Cagliari Doc. As a vermentino, it has lower acidity than average, and some might say there’s too much bitterness, but not me. It has a very special floral fragrance, a kind of fragrance belonging to some small waxy yellow flowers growing in China and blossoming in winter.
The place where the wine comes from is on the southern edge of Sardegna, which looks like the frontier of the battle between the natural and human beings, and the natural seems winning. this place is pretty hot in summer, so a lot of wines in this region taste like the grapes are burnt, seems there is a piece of coarse charcoal in the center of every sip of wine
  and smooth and delicate in the mouth, but this wine doesn’t have this problem, it is very smooth and fine in the mouth. The alcohol level is 15 degrees, but I don’t feel it at all. Anyway, This is one of my favourite wines. As for food pairing, I would recommend something with fine texture and without bitterness and doesn’t require extra acidity, like baccala cooked with butter, seafood simply marinated with lemon but not with too much olive oil, etc.
