关于法南酒的随手 法国南部很早就就意识地培育低酒精度的白葡萄品种。所以很多南法的白葡萄酒酒酒精度都比较低，可以说是芳香型但一点也不齁（意大利南部也是哦）除了白歌海娜的酒精度就是很容易飙高，没办法。 我一直很喜欢picpoul这个品种，今天还是喜欢，清香微苦，不酸不腻，而且也不贵。生蚝绝配。听说这种酒现在在伦敦很流行。有人说它是穷人的chablis，但是我觉得它并不像chablis啊，今天陈翔宇老师说它是清爽型的灰皮诺，我觉得比较中肯。 现在，终于开始流行有复杂度的桃红了，finally！而且居然还能稍微陈年。我从来不觉得白葡萄酒不能陈年，但是确实有刻板印象觉得桃红不能陈年，但是今天尝的白是2324年的，反而桃红是22年的，居然还挺好。似乎是因为它用玻璃塞，而且是稍微过了橡木桶的。挺有矿物感甚至略有咀嚼感。 大小芒森酸度够，即使热的产区也不需要早采收。 mauzac是一个清爽芳香低酒精度的品种，像苹果汁。 西拉比起歌海娜，更需要昼夜温差大点。 今天怼着尝了几款南法gsm排列组合，控制变量，终于确定了歌海娜的标志性香气，所谓的歌海娜的“香料味”。 朗多克鲁西荣现在没有桶味非常重的酒，顶多顶多是你能清楚地感知他确实是用了桶，但也不会特别重。 慕和怀特单宁粗壮重，酒精度较高，很容易做出显脏的动物味，但是2019地中海沿岸是减产/高质的。产量不高，比较厚密的单宁，不容易做得干净，但是干净的真的就是厚实天鹅绒的感觉，而且不会太酸，是我喜欢的型。 作为葡萄酒专业人士，我个人就是不喜欢高酸的酒，sue me啊。不过我说我不喜欢高酸类似于我说我数学不好，只是作为重点中学理科班且物理化学还学得挺好的人，数学相对不好。 酒量不行，又喝得胃难受了。不过因为很少的酒精就会喝到难受，根本不可能出现酒精上头发酒疯去闹别人的情况，以至于我很长时间里都认为那些发酒疯的人全特么是借酒装疯（现在我觉得这个说法太绝对了，实际上只有99%的人是借酒装疯）。 The south of France realized early on the value of cultivating white grape varieties with naturally low alcohol.
